Vegan Empanadas from Scratch with 3 Fillings

Hola! I finally got around to making empanadillas, it was easier than I thought as I’ve never made dough before.
For my fillings I used Lentils, Quinoa, and TVP. I think tofu would be interesting and any processed faux meat of course.
I hope this showed you a simple approach to making them yourself and BTW did you notice they were able to be meal prepped? You’ll always have food stocked up to eat with these in the freezer. Much love and abundance.
