TASTY EASY TO MAKE LENTIL LOAF| VEGAN "MEATLOAF"|VEGAN RECIPES





Lentil loaf is usually the go-to recipe that I use when I want something wholesome. It is packed with nutrients, fiber and of course, protein!

It comes in handy for special holidays like Thanksgiving and Christmas! But to be honest, I use this recipe throughout the entire year. Hope you enjoy!

Lentil Loaf Recipe:

Ingredients

1 tbsp coconut oil
1 large onion, chopped
1 package of cremini mushrooms, chopped
1.5 cups carrots, grated
1 tbsp garlic, grated
2 tbsp green seasoning
2 cups cooked lentils
2 cups cooked rice
1 cup oats
1/2 cup Nutritional Yeast
2 flax eggs* (1 flax egg = 1 tbsp grounded flax seeds + 2.5 tbsp water)
1/3 cup soy sauce
1/4 maple syrup
1 tsp fresh thyme
1tsp oregano
1 tsp pepper sauce
salt to taste

Sauce

1 cup water
1 cup coconut palm sugar (feel free to use maple syrup or any other sweetener)
1 tbsp Worcestershire sauce
1/3 cup ketchup
1 tsp mustard
1/2 garlic powder
