Shiitake Lettuce Wraps Recipe :: Vegan

Recipe Difficulty ::EASY:: This is my quick’n dirty vegan twist on the ubiquitous Shiitake Lettuce Wrap or Cup.Simple enough to toss together for a delicious lunch or serve these as an appetizer at your next party.

You can rehydrate dried shiitakes of you are unable to get fresh shiitake mushrooms in your sliver of the universe. Use coconut aminos instead of soy sauce to keep the recipe soy and gluten-free or you can use (vegan) oyster sauce if you don’t have dietary restrictions. I sweetened with dates because someone challenged me to make it sugar-free but feel free to use your favorite sweetener…whatever the equivalent of 2 tsp. of regular sugar. If using a granulated sweetener, mix it into the coconut aminos or soy sauce before adding it to the dish.
