Tahini is a basic sauce or rather ingredient in the Middle Eastern cuisine. It is creamy sesame butter. Tahini may not taste the best on it own but it gives a creamy and subtle bitterness to any sauce and takes it to another level.
I make my tahini at home. When you make homemade tahini you have complete control on the ingredients that you add. It requires only 3 things sesame, salt and oil for blending. I mostly have all of this in my pantry. So, all you have to do is blend it. I do not toast my seeds as it is healthier this way and my power blender sometimes does it for me. But you can go ahead toast the sesame seeds for a couple of minutes in your pan.
Homemade tahini mixed with a tiny bit of garlic paste, lemon juice, salt and water makes for a lovely homemade tahini dressing or sauce.
